Each Chef had one hour to design a 3 ¾ hours to prepare and produce a three-course meal after receiving their black box containing great WA produce, which was judged by a professional panel of culinary professionals. The Chef of the Year is dictated by rules and judging criteria as specified by the World Association of Chef Societies (WACS) and the Australian Culinary Federation (ACF) WA, who take great care in ensuring that the judging criteria conforms to International standards and practices.
The judges who are all WACS and ACF accredited, were carefully selected to give a balance of modern and traditional cuisine. This year saw long time industry professionals make difficult decisions. The panel of four judges for each day were of the highest quality, renowned for their own skill and personal flair with food. Patrick O’Brien, Director of West Coast Academy of Hospitality and Tourism Personal Service and Retail was the 2009 Chair of Judging and Australia’s 2009 Chef of the Year Justin North dedicated his time to fly over from Sydney and be involved in the final decision.
The six chefs who competed in the Grand Final were among the best chef’s in WA, so it was only expected that these chef’s created some incredible dishes.
