USS DENVER
The Catering Institute of Australia of WA are proud to announce that Lee Martin, Proprietor and Managing Director
of BY "WORD OF MOUTH CATERING COMPANY", has been invited on the USS DENVER on Thursday 18th October,
to show some of his skills as a chef, alongside the American Navy Chefs on the ship.
Lee Martin lived in England and was a private chef to the Admiral of the British Navy, in Greenwich London.
He has also had the privilege of cooking for members the Royal Family including Prince Charles, and for various
Members of Parliament including John Major.
He immigrated to Australia and has worked in all the top Restaurants and now resides in Western Australia.
He was Executive Chef at the Oceanus Restaurant when they won a Gold plate in the prestigious Gold Plate Awards
in 2005, and was a finalist in the Chef of the Year in 2004, 2005 and 2006.
Lee has achieved his ambition to run his own outside Catering Company, which has proved to be very successful in
the Hospitality Industry. Let’s see how he likes working in the Galley on board USS DENVER!!!!!

USS BONHOMME RICHARD
The Catering Institute of Australia of WA, are proud to announce that, Stephen Clarke, Proprietor and Managing
Director of "CLARKES OF NORTHBEACH RESTAURANT", has been invited on board the USS BONHOMME RICHARD
on WEDNESDAY 17TH OCTOBER , to show some of his skills as a chef alongside the American Navy Chefs on board
their ship.
Whilst living in Britain, Stephen was the personal chef to the Earl and Countess of Leicester, at their most
prestigious venue in Britain Holkan hall, where personal friends of the family and members of Nobility
came to Dine. He also had the Honour to cook for her Majesty Queen Elizabeth II when she visited Holken Hall
as guests of the Earl and Countess of Leicester.
One New Year’s Eve Ball at Holken Hall, Prince William and Harry came into the Kitchen to thank him for a
wonderful array of food that had been presented that evening.
Stephen immigrated to Australia with his family and has worked in all the top Restaurants in Perth where he
has decided to stay to settle. He was recently in Sydney where he won a Silver medal with one qualified chef
and one apprentice. At this event, sponsored by M eat & Lifestock Australia, they had to cook a three
course meal in ninety minutes. They won $2000.00.
Stephen has just won the most prestigious award, The Chef of the Year 2007. This is the premier hot food
competition in the State receiving national recongnition that builds on the Catering Institute’s motto,
"Encouraging and Rewarding Excellance".
To top this, their Restaurant is a FINALIST IN THE 40TH GOLD PLATE AWARDS, to be held at the Perth Convention
and Exhibition Centre on MONDAY OCTOBER 29TH 2007
